A lassi is a simple Indian beverage made with yogurt. It’s usually served before or after a meal, to help with digestion. It is traditionally served at room temperature, although in the US it’s normally served over ice. Some are thick like a smoothie, but a thinner version is more authentic. We prefer the latter, and that is reflected in our recipe. Skip the ice and use room temperature water for a very traditional version.

Ingredients
- 1/2 cup ice cubes or water
- 1/2 cup plain yogurt
- 1/2 tablespoon honey or other sweetener, to taste
- 4 leaves fresh basil or fresh mint
Garnish: (optional)
- 1 sprig fresh basil or fresh mint
- 1/2 teaspoon lemon zest (finely grated)

Instructions
- Place all ingredients in a blender.
- Blend on medium to high until smooth.
- Add more honey or other sweetener if desired.
- Serve with or without additional ice. Garnish as desired.
Recipe Notes
VARIATIONS:
- If you don’t have a blender, combine everything in a mason jar or other container with a lid, and shake well. Mince the basil and stir in, or just garnish with basil.
- Add 1 scoop of protein powder for a more filling breakfast smoothie.
