Sea scallops are the large (and more commonly found) type. Bay scallops are very small. You can use either one, but we typically go with the larger ones. Make sure that they’re very fresh and cook them on the same day if possible. You don’t need to do much to really good, fresh scallops, which is one reason we like them so much.
This is a very simple way to cook scallops, especially for those times when the stovetop or skillet is being used for other things. You can add just about any fresh or dried herbs. My favorites for this dish are tarragon, dill, lemon thyme, and rosemary. Herbes de Provence is a mixture of dried herbs that is also very nice with scallops.

- 1 pound sea scallops
- 1 lime
- 1 tablespoons butter
- 1/2 tablespoon olive oil
- 3 cloves garlic
- herbs to taste
- Salt and pepper to taste

Instructions
- Preheat oven to 400°F.
- Place scallops in a medium bowl. Squeeze juice of lime over them and let stand while you continue.
- Place butter and oil in baking dish and heat in oven to melt.
- Mince garlic. When butter has melted, remove dish from oven and add garlic.
- Mince garlic. When butter has melted, remove dish from oven and add garlic.
- Add scallops and lime juice to baking dish, stir, and spread evenly. Sprinkle your favorite herbs, salt, and pepper over scallops.
- Bake (uncovered) 10 to 15 minutes.

- Serve as-is or over pasta or rice. Add a simple salad or vegetable on the side.
