Waste Not, Want Not - How to Use the Whole Chicken

When the kids were little I’d roast a chicken and we would finish it off in one sitting if we were really hungry. But now the kids are grown and most meals are just for myself and my husband. 


Richard will only eat dark meat, which is fine with me since I prefer the white meat. However, after two meals the dark meat is gone and there’s one side of the breast left over (not to mention all the little bits of meat hiding in hard-to-reach places). So, what to do with those leftovers?


Normally, I debone the remaining chicken, cut the meat into small pieces and freeze it to use later in soup, fried rice, or on a salad. But, there’s still the issue of the organs and bones. If you really want to use the WHOLE chicken, what do you do with those? 


Chicken livers are a delicacy to many, but if you’re not terribly fond of them, don’t worry! Chop them up and add to chicken soup. The other organs are a little more difficult to dispose of, unless you have a dog or cat. Your pet will be more than happy to help you out! I usually take the organs out of the packet and place them in the cavity of the chicken to cook as it roasts, or I boil them to feed to my super healthy dog.


Sometimes I’ll add the organs to chicken stock, which brings us to the final way to use the WHOLE chicken: bone broth. When all the meat is used up, place the carcass in a slow cooker or soup pot with water, vegetables and herbs. Toss in the organ meat if you don’t have a hungry pet, and cook on low for 12-24 hours.


So, here’s the general outline for using the Whole Chicken:


1. Roast the chicken or cut it up for another recipe.

2. Debone and use the meat in soups, salads, enchiladas, casseroles, etc.  

3. Make broth with everything else.
