Leave No Turkey Behind - Leftovers #1


It’s not even Thanksgiving yet, and I’m talking about leftover turkey. Of course, we try to work it all out so we’ll have just enough leftover turkey for a few sandwiches, but in my house we always had way more than that! Turkey soup is one way to use some of that meat. 

Before I talk about the meat, let me just say a word about the carcass. If you have the room to keep it until the next day, I have a project for you! Make bone broth with it. See my recipe for chicken bone broth. Generally speaking, you can double that recipe and follow the same procedure. It’s really easy if you have a very large crock pot. Otherwise, you’ll need a large soup pot. Read more HERE.

While your bone broth is in the making or after you’ve finished (if you want to use the broth in this recipe), make a variation on my Chinese 5-spice Chicken Soup. This recipe uses a 4-quart saucepan. Feel free to double it if you have a 5 or 6-quart soup pot. 

Chop the onions, carrots, mushrooms, garlic and ginger; cook and stir over medium-low heat. Add the broth and simmer about 5 minutes.


Chop and rinse the bok toy:


Add bok choy, leftover turkey and spices.
