Fig, Almond and Olive Oil Cake - Nice treat after a long day!


I had to work very hard for this piece of cake! 

I was visiting my daughter and son-in-law in Oklahoma, and boy was it hot! They had just moved into a new (to them) house, and I had volunteered to help in any way they wanted. They assigned the yard work to me. After all, how hard could that be?

When we drove up to the house, I quickly realized this was going to take a while!






Did I mention that this is a rental property? As graduate students, Rebecca and Nick are not in a position to buy a house or to pay much in rent. But they are homebodies and are very excited about growing their own vegetables and spending time outside. 

Although things were overgrown, the house itself is very cute with lots of potential. It’s just the type of house they might one day purchase and fix up. It’s probably good that they’ll get a taste of what that’s like, before they make such a commitment themselves!

Fortunately, I love a garden challenge, and with the help of my daughter, son-in-law and parents we made a good amount of progress. 

I worked for 4 days straight, taking a shower twice each day. It’s been a long time since I’ve felt that disgusting! Luckily, they have a washer and dryer so I could wash everything before packing up to come home.

After the final shower of each day, Nick and Rebecca would prepare a delicious vegetarian and gluten-free meal, which was quite a treat since I’m the cook at home. It’s nice having someone else cook for you!


This is just one example of the healthy and delicious meals I enjoyed. (I’ll try to recreate this one and include it in my cookbook!) We’d take the food out on the patio to eat—and sweat all over again! They were so excited about their patio that the high 90s was not going to push them indoors. Not yet, anyway!

The last night of my visit (after a day spent primarily on indoor work and laundry), I finally had the energy to make a gluten-free dessert for Rebecca and Nick—a real treat for them since they rarely make desserts.

Rebecca bought all the ingredients I needed to make a Fig, Almond and Olive Oil Cake. It smelled and looked great as I took it out of the oven.


It received thumbs up from everyone and quickly vanished! We had worked up an appetite and felt no guilt in devouring it.
