Easy Breakfast Ideas for Thanksgiving

It’s hard to believe that Thanksgiving is next week! Do you have family arriving for the holidays? Maybe you’re trying to decide how to feed everyone, not just for Thanksgiving day, but all the other meals too. If so, here are a few ideas that work for breakfast, lunch or even a light dinner.


My family loves pancakes. You can make them on the spot or even ahead of time. Freeze some in baggies, filled with 3 or 4 each, and let your guests thaw them in the microwave or toaster oven.

Yesterday, I made a batch of Buckwheat Pancakes for dinner, then froze the rest to eat another day. This was a simple variation of the Hearty Whole Wheat Pancakes I’ve made for years, just substituting 1/2 cup buckwheat flour for some of the whole wheat flour.

This time of year, I often make my Pumpkin Oat Pancakes, which take just a little extra time, but are well worth it. I took some extras on a trip to the mountains so we could easily enjoy a hearty fall breakfast in our cozy cabin.

Or how about a Blueberry French Toast Casserole? You can use up old bread or try it with hamburger buns, challah bread, french bread or gluten-free bread. There are many fun variations on the theme, as noted on the recipe.

Hot cereal is also popular in our house, and it’s a great option for your gluten-free guests. Oatmeal is always good, but try cream of brown rice or buckwheat cereals too. Cooking according to package instructions, then stir in some pumpkin purée and season with pumpkin pie spices.

Top with walnuts, coconut, maple syrup and a little cream. This is a very easy, yet elegant breakfast to serve your family and friends.

Perhaps you want to avoid sugar, and save your sweet tooth for pumpkin or apple pie? Try this savory Cheesy Green Rice Casserole.

Or how about making a Broccoli or Kale Crustless Quiche? You can make these ahead of time, and your guests can eat it cold or heat a serving in the oven or microwave. I love DIY breakfasts for my guests. That way, everyone can get up and eat when they feel like it, without feeling guilty.
